Ingredients

  • 2 pounds chicken breast
  • ½ cup Greek yogurt Plain, full-fat
  • 4 garlic cloves minced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • tsp salt
  • 1 tsp dried oregano
  • ¾ tsp dried thyme
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp onion powder

Instructions

  • In a medium bowl, whisk together the Greek yogurt, minced garlic, lemon juice, lemon zest, olive oil, honey, paprika, onion powder, oregano, thyme (or Italian seasoning), salt, and black pepper until smooth and well combined.
  • Add the chicken breasts to the marinade and toss until evenly coated on all sides. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
  • Preheat the oven to 400°F and lightly grease a baking dish with olive oil.
  • Arrange the marinated chicken in the baking dish in a single layer, allowing any excess marinade to remain on top.
  • Bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  • Broil for 2–3 minutes at the end, if desired, to achieve very light golden edges (Be careful to not overcook the chicken). Remove from the oven and let the chicken rest for 5–10 minutes before slicing and serving.

Notes

  • Fully coat chicken in marinade for best flavor
  • Marinate at least 30 minutes for juicy, tender chicken
  • Use a single layer in the baking dish for even cooking
  • Don’t overcrowd or the chicken will steam instead of roast
  • Broil 2–3 minutes at the end for light golden edges
  • Let chicken rest before slicing to keep it juicy
  • Slice against the grain for the most tender texture
