One-Pan Easy Chicken and Potatoes...
So some nights I just want a dinner that’s easy, no mess, and everyone will actually eat... and this one-pan Mediterranean chicken & potatoes has been my go-to 🍗🥔
Perfect for busy weeknights when you still want something homemade without standing in the kitchen all night.

Ingredients:
Chicken Marinade:
• 1.5 lbs chicken thighs or breasts
• ⅓ cup olive oil
• 3 garlic cloves, minced
• 1½ tbsp lemon juice
• ⅓ cup chopped parsley
• ¾ tsp oregano
• ¾ tsp cumin
• ¾ tsp coriander
• ¾ tsp paprika
• 1¼ tsp salt
• ½ tsp black pepper
Potatoes:
• 1.5 lbs baby potatoes, cut into small pieces
• 2 tbsp olive oil
• 1 tsp salt
• ¼ tsp black pepper
• ½ tsp paprika
• ½ tsp garlic powder
• ½ tsp oregano
Optional: Feta, parsley, lemon wedges & tzatziki ✨
Instructions:
Mix together all marinade ingredients in a bowl.
Add chicken and coat well. Marinate at least 30 minutes or overnight.
Preheat oven to 400°F.
Toss potatoes with olive oil and seasonings in a baking dish.
Place chicken on top and pour over remaining marinade.
Cover and bake 50–55 minutes.
Uncover and bake another 15–20 minutes until golden and tender.
Optional: Broil 2–3 minutes for extra color.
Top with feta, parsley, lemon juice & tzatziki. Serve with warm pita bread or a simple salad.

1.5 pounds boneless skinless chicken thighs
4 cloves garlic minced
1 tsp grated ginger
4 tbsp gochujang
2 tbsp soy sauce
2 tbsp brown sugar
1 tbsp honey
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp vegetable oil
1 tsp rice syrup or corn syrup
1 tsp onion powder
1 tsp black pepper
1 tbsp grated Asian pear or apple optional, but recommended

This salmon feta pasta bake is creamy, cozy, and made for busy nights when you still want something homemade without the stress. 🍅 🍣 🍝
Ingredients:
100 g dry penne pasta
1 salmon fillet 6–8 oz (170–225 g)
1½ cups cherry tomatoes
1 cup feta cheese
3 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
2 tbsp fresh parsley chopped
OPTIONAL:
2 –3 tablespoons reserved pasta water
squeeze of lemon juice
red pepper flakes
Instructions
1. Preheat oven to 400°F.
2. Add cherry tomatoes, feta cheese, and salmon to a baking dish. Drizzle with olive oil and season with salt and black pepper.
3. Bake for 25-30 minutes or until tomatoes are soft, feta is creamy, and salmon is cooked through.
4. While everything bakes, cook penne pasta in salted water until al dente. Reserve a little pasta water, then drain.
5. Remove the baking dish from the oven and gently mix everything together to create a creamy sauce. Add cooked pasta, garlic powder, smoked paprika, and parsley. Toss well to coat. Serve warm.
