Instructions
This easy chicken breast recipe comes together in just a few simple steps. The marinade does most of the work for you.
Step One (Make the marinade). In a bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard, honey, oregano, salt, pepper, and paprika until well combined.
Step Two (Marinate the chicken). Place the chicken in a dish or bag and pour the marinade over it. Coat well, cover, and refrigerate for at least 30 minutes, or up to 8 hours. If you’re unsure about timing, I break it down in my Ultimate Chicken Marinade Guide so you always get juicy chicken.
Step Three (Cook your way). Cook using oven, air fryer, or grill until fully cooked. Rest for 5 minutes before serving.

Substitutions
Chicken breasts: Chicken thighs work just as well and stay extra juicy. You can also use chicken tenderloins for quicker cooking.
Olive oil: you can swap with avocado oil, sunflower oil, or any neutral cooking oil.
Fresh lemon juice: Lime juice works if needed, or a small splash of white vinegar for acidity.
Garlic: Use ½ tsp garlic powder per clove if you don’t have fresh garlic, though fresh gives the best flavor.
Dijon mustard: Wholegrain mustard works, or you can skip it if needed (it just adds a slight depth of flavor).
Honey: Maple syrup or brown sugar can be used as a substitute.
Dried oregano: Swap with Italian seasoning, dried thyme, or dried basil.
Paprika: Can be left out or replaced with a pinch of chili flakes for a little heat.
Fresh parsley / oregano (garnish): Swap with cilantro, green onions, or simply leave it out.

Lemon juice tenderizes the chicken, but because it’s acidic, you don’t want to over-marinate for too long or the texture can start to break down slightly.
Storage
Cooked chicken keeps well in the fridge for up to 4 days in an airtight container, making it great for meal prep.
You can also freeze the raw chicken in the marinade. Just thaw it overnight in the fridge before cooking. The lemon garlic flavor actually deepens nicely, making it a great make-ahead option for busy weeks.
